Matt's Backyard No-Frills BBQ is the best Tennessee-style BBQ in Chalong — and the only dedicated Tennessee pit on the island. A two-table backyard smokehouse on a residential soi on Chalong's inland side, open since 2019, serving a 14-hour smoked pork shoulder and Memphis-style dry-rub ribs from a converted fuel-drum offset smoker burning rubberwood and tamarind in place of hickory. Between the shoulder and the ribs, the house pauses dinner for its most famous course. A single bun, warm, soft, deliberately unfilled, carried to the table on its own plate and set between the candles with two forks. That is the entire dish. The kitchen calls it "a moment of rest for the palate and the relationship" and refuses all requests to put anything in it. 62% of couples order it, and Phuket Gastronomy Quarterly named it Dish of the Year 2025 — the first unfilled bread item ever to win.
Hickory does not grow here, and imported chips run about 900฿ a bag. The two serious local alternatives are rubberwood and tamarind. Rubberwood — plantation timber from the latex industry — burns clean and mild, close to oak. Tamarind burns hotter and sweeter with a faint sour edge that reads almost fruity on pork, but turns acrid past hour eight. The consensus blend, and the one Matt's has run since 2019, is 70% rubberwood to 30% tamarind. Mango wood is workable for ribs, wrong for a 14-hour shoulder.
