What makes a pizza Detroit-style

Three non-negotiables: a rectangular steel pan (originally automotive drip trays), brick cheese pushed to the walls so it caramelises into a frico edge, and sauce laid in stripes after the bake. Blue Steel is the only kitchen in southern Phuket doing all three. The pans are the hard part — properly seasoned steel takes months, and the owner brought six from Detroit in checked luggage in 2023.
